10 Steps to Cooking Your Own Smoked Beef Brisket

  1. Start with a clean unit. remove any material left over from the last weber smokercookout.
  2. Light the Charcoal using a chimney starter. Be sure to place the chimney starter on the unit, not the ground. The heat from the unit can be dangerous if left sitting on concrete while the charcoal begins to heat up.
  3. Once the charcoal in the chimney starter has turned to a chalky gray color add to the bottom of the grill. (Be careful to use heat resistant gloves)
  4. Add more charcoal and wait for the rest to turn to a light gray color
  5. Begin to assemble the rest of the unit and add cool tap water to the water pan
  6. Adjust vents to maintain temperature of about 225-250 degrees
  7. Add wood chips, or if you prefer, 3-5 fist sized chunks of the preferred hardwood to the coals.
  8. Add meat and cover.
  9. Monitor temperature and adjust vents accordingly
  10. Remove Brisket using the 60-90 minutes per pound rule of thumb. Remember the smoker’s montra “Slow and Low heat will generate a great tasting of meat”

Here are some tips for using Weber Smoker:

  1. Use briquets, at least at first. It’s much easier to work with compared to lump charcoal. If you do choose to use lump charcoal, don’t add any extra wood chips or would chunks! You’ll oversmoke the food and that’s bad!
  2. Start early. Give the charcoal time to start up, and the liquid in the water pan to get up to temperature before you put on the food.
  3. Don’t lift the lid any more than you have to (for mopping, adding charcoal, etc.
  4. Keep the temperature as stable as you can.
  5. Line the water pan with aluminum foil. Trust me; it will be much easier to clean later if you do!
  6. Make small changes to the vents when you need to adjust the temperature. Give it some time to work.
  7. The internet is your friend. Check out Weber’s site, some of the bbq forums
  8. Get a good book on smoking. I think we all know a good place to look for one.

I smoked my first chicken on the Weber smoker this evening Wow what flavor. I am a novice and spent some time watching YouTube videos on tips for cooking on my new Weber smoker, it was time well spent. I smoked a chicken tonight in about an hour and 10 minutes still need to master the temperature control of my smoker. Anyway I used lump hardwood charcoal because it came highly recommended for flavor and I am glad I did not use charcoal briquettes but I was a little concerned about the sparks that the lump charcoal gives off.

I recommend using an oven thermometer which can be purchased for about $6.00 and set it on the grill rack where the food will sit, the temperature gauge on the lid of the Weber Smoker registered much hotter than the surface of the rack where I placed the chicken. I used mesquite wood for flavor and did not put water in the pan, but placed foil to completely cover the water pan maybe that is why smoker was hotter and chicken cooked faster. I seasoned the chicken with only Kosher salt, ground pepper and then basted it with olive oil. When I took the chicken off the smoker the temperature registered 179 which is higher than the 165 recommended for chicken but it was so moist and full of flavor amazing. Read Full Review….

I had been using a smaller electric smoker and grew out of it. Trying to cook two pork shoulders on the electric would take over 12 hours as the thing just could not put out enough heat. I was a bit skeptical of having to hand hold the charcoal smoker by feeding it charcoal every hour or so, but i found the Minion Method and that solved the issue. This 22.5 incher is simply Amazing.

It took me a few times to learn how to control the fire using the Minion method. Here is what i do:
1) Load it fully with unlit charcoal (i use Stubb all natural or Lump so no chemicals)
2) Set some wood on top of the charcoal. I go to an orchard down the road for Apple wood which is awesome.
3) Use a chimney starter filled maybe 1/5 of the way, you do not want to light a lot of coals
4) Close two of the bottom vents all the way. Always keep the lid vent fully open.
5) Put the lit charcoal on the side furthest from the open vent. You want to draw the fire to the open side.
6) Use the one vent only to control the temperature
7) Mop with Apple Cider Vinegar every hour
8) Take off meat at 190F
9) Wrap in foil and let sit for at least 45 minutes Read  Full Review…..

I am a small restaurant owner and have been doing Pulled-Pork sandwiches from a smaller smoker for years. When I bought the 22.5 inch SMC, I had high expectations. I was not disappointed! I’ve been using Weber products for years and knew the craftsmanship of this new smoker would be great. I use it every day to smoke chicken and pork. It works perfectly. I use a charcoal base then add small white oak and hickory logs. My cliental has doubled! The SMC paid for itself in the first week.
The only design issue I had was, there were no handles on the side to lift the food cylinder portion off the fire box. I fabricated two handle from 12 gauge steel and bought two plastic Weber handles from the manufacturer. They work great and it looks as though it came from the factory!
